Café Alice Opens at The Roosevelt New Orleans, Daily from 6 a.m.

New Orleans – October 30, 2026 -- Café Alice, a new all-day café and bar, has opened at The Roosevelt New Orleans, A Waldorf Astoria Hotel, and serves guests daily from 6:00 a.m. to 8:00 p.m. It replaces the former Teddy’s Café at the hotel, which has been open since 1893 and sits a few steps from the French Quarter.

The namesake is Theodore Roosevelt’s eldest daughter

The café honors Alice Roosevelt, first daughter of President Theodore Roosevelt, the hotel’s namesake. The source describes her as one of the most talked-about figures of her time. The menu and décor borrow her unconventional streak.

Executive Chef Daniel Mills builds the menu around Alice’s life

Breakfast includes Alice’s Emily Spinach Benedict, named for her pet garter snake. The Alice Blue Latte gets its pale blue shade from spirulina and combines coconut, vanilla, espresso and coconut milk. The color is named for the shade she wore so often.

Lunch and dinner pair Southern flavors with upscale ingredients. The Black Tie Chicken serves crispy chicken bites with shaved black truffle, caviar and crème fraiche. Mills said the menu draws on Alice’s personality and the relaxed style of French brasseries, and he wants guests to “step into Alice’s world.”

Cocktails include:

  • The Wild Child, with Bombay Sapphire Gin and matcha
  • The Espresso Beignet, with Altamura Vodka, Beignet Liqueur, Caffè Lucano and espresso
  • Doctor’s Bellini, with Juliette Heirloom Peach Liqueur and Peychaud’s Bitters
Pastry Chef Kareena Dennis bakes day and night

Dennis’s hand-crafted pastries are available throughout the day and evening. They include a Matcha-Yuzu Éclair, a Sazerac Apple Tatin Entremet and an Ube Basque Cheesecake.

ForrestPerkins designed a room of botanicals and brass

Climbing botanicals paper the walls, framing architectural moldings and arched brass niches. A green latticed ceiling tops the room. Cream and terracotta tones, marble-topped tables and velvet banquettes complete the look.

A cookie sandwich earns a discount at the zoo

For a limited time, guests who buy the Critter Sable Cookie Sandwich, a twist on the animal cracker, receive a discount on admission to the zoo through a partnership with the Audubon Nature Institute. A portion of proceeds supports the institute’s Marine Mammal Rescue program and its turtle release efforts.

Café Alice joins five other dining options at the hotel

The hotel also offers the relaunched Fountain Lounge, the Sazerac Bar, the Italian-inspired Domenica, a seasonal Rooftop Bar and 24-hour in-room dining. Hilton’s food and beverage consultancy StiR Creative Collective developed Café Alice with Mills and the hotel team. Its earlier work includes Peacock Alley and Lex Yard at Waldorf Astoria New York and Brassica at Waldorf Astoria Atlanta Buckhead.
