Canton Township, Michigan – October 13, 2026 -- Seniors, adults with disabilities and families facing food insecurity in Castle Rock, Colorado, are getting weekly meal deliveries again. The Human Development Fund (HDF) will fully fund the Wednesday Wheels program run by the nonprofit restaurant Sunday Salmon for the next two months.
Rising costs had cut deliveries to every other week
Wednesday Wheels delivers organic, allergy-friendly meals to seniors on limited incomes, adults with intellectual and developmental disabilities, and families struggling to afford food. As demand grew, so did costs, and Sunday Salmon had to move to biweekly deliveries. Its waiting list climbed to 80 people.
Weekly runs now reach 210 meals and 30 more people
With HDF's funding, weekly service has resumed and expanded:
- 210 meals delivered each week, up from approximately 180
- 30 additional people served from the waiting list
- Waiting list cut from 80 to 50
- Two months of full program funding
HDF Founder and CEO Abdirahman Kariye said the group acted after learning that seniors, people with disabilities and families in Castle Rock risked losing consistent, nutritious meals.
Sunday Salmon serves about 1,000 meals a week
Founder Mary Grothe opened Sunday Salmon in January 2025. The restaurant served nearly 20,000 free meals in its first year. It now provides roughly 1,000 meals weekly through community dinners, school meals and delivery programs.
The partnership brings HDF's work to U.S. communities. In 2025, the organization served more than 3.5 million people and provided more than 1 million hot meals through its international programs.
