Peninsula Papagayo – – October 14, 2026 -- Guests at Nekajui, a Ritz-Carlton Reserve on Costa Rica's Peninsula Papagayo, can now order four tequila cocktails made with Pantalones Organic Tequila, the brand co-founded by Matthew and Camila McConaughey. The Cowboy & Mermaid collection marks the brand's debut in Costa Rica and was created exclusively for the resort.
Texas ranch culture meets Guanacaste's sabanero cowboys
The menu draws on McConaughey's Texas roots and the sabanero cowboy heritage of Costa Rica's Guanacaste region, and pairs that ranching spirit with the country's surf culture. Ingredients and influences come from Texas, Brazil, and Costa Rica.
"We literally met over margaritas," the McConaugheys said, adding that Nekajui is the right place to "kick off your boots, sip tequila, and enjoy the view."
Four signature serves use all three Pantalones expressions
Pantalones is a USDA-certified organic tequila distilled in Amatitán, Jalisco, from 100% blue Weber agave. The lineup includes Blanco, Reposado, and Añejo, and the menu uses each one.
- Guacachile: Blanco tequila, mezcal, limón mandarina, agave, avocado, jalapeño, and Tajín. It is a spicy margarita with citrus, gentle heat, and creamy richness.
- Goiaba: Reposado tequila, pink guava, agave, citrus, and guava salt. This guava margarita nods to a fruit celebrated in both Brazil and Costa Rica.
- Tixos Old Fashioned: Añejo tequila, cacao distillate, Costa Rican cold brew coffee, and spiced chocolate bitters. It draws on Costa Rica's coffee and cacao traditions.
- Palomitas: Blanco tequila, Texas Ruby Red grapefruit, Costa Rican mandarin lime, coconut soda, and a popcorn salt rim. The name is Spanish for popcorn.
Five resort venues will pour the collection
The cocktails debut across Nekajui's dining and drinking spots. These are Puna, the signature restaurant conceptualized by Chef Diego Muñoz, and Ámbar, a suspended treetop bar. They also include Niri Beach Club, Cooper's, a hidden speakeasy, and La Casona, the lobby lounge.
Cristian Albacar, General Manager of Nekajui, said the collaboration let the resort put its own twist on the couple's favorite cocktails, honoring their Texas and Brazil roots.
