Palm Beach – October 19, 2026 -- Florie's by Mauro Colagreco at Four Seasons Resort Palm Beach is hosting eight wine dinners from October 2026 through May 2027, with most seatings limited to 24 guests and the Opus One finale capped at just 12.
Each evening pairs a curated flight of wines with a four-course menu created by Chef Mauro Colagreco. He builds every menu around the origin, character and story of the featured wine. Guests start with a welcome pour and canapés on Florie's terrace, then sit together in the Private Dining Room.
Colagreco described the approach as starting with the wine and creating a menu that responds to it, so guests can discover a terroir through the eyes of the people who bring it to life.
Bordeaux, Languedoc and Napa open the season
The series begins on October 29 with a Bordeaux tour led by Bernard Magrez, including selections from his portfolio such as Château Pape Clément. On November 18, Gérard Bertrand presents the wines of the South of France, with a focus on the terroirs of Languedoc. On January 21, Bouchaine Winery brings its Carneros wines, from one of Napa Valley's most historic estates.
Harlan Estate and Laurent-Perrier headline February
February 9 is dedicated to Harlan Estate and its Napa Valley Cabernet Sauvignon, billed as an exceptionally intimate evening. On February 25, Champagne Laurent-Perrier takes over, with each pour matched to a menu designed around it.
Lafite Rothschild, Oregon and Opus One close the run
On March 18, the series returns to Bordeaux for an evening centered on Château Lafite Rothschild. April 15 explores Oregon wine through an emerging winery crafted under the direction of one of Burgundy's acclaimed winemakers.
The season ends May 20 with Opus One and its Napa Valley wines, limited to 12 guests and described as the most intimate experience of the series.
