NEWBURGH – October 29, 2026 -- The 100 Food Journey, a Tale of Indian Cuisine, has launched "The Third Voyage: An Autumn-to-Winter Culinary Journey," its third menu at 34 Plank Road in Newburgh, N.Y. The restaurant replaces its menu every 100 days, so returning guests find a new set of dishes rather than the same favorites.
Partner Glaxon Geevarghese describes the idea this way: "The address stays the same, but the destination changes."
The Third Voyage leans on slow-cooked dishes, warming spices and ghee
The new menu is built for the colder months, with aromatic spices, slow-cooked recipes and ghee, which the restaurant calls India's culinary "liquid gold." Dishes include Mumbai Vada Pao, Tellicherry Pepper Mussels, Kolhapuri Chicken Rassa, Rajasthani Laal Maas, Meen Pollichathu, Plantain Kofta Pumpkin Curry and a 12-Hour Dal Makhani.
Desserts are Pumpkin & Cinnamon Obsession and Cardamom Kiss.
Chef Tarun Arora brings 18 years of hospitality experience to the kitchen
Managing Partner and Executive Chef Tarun Arora has worked at Pullman & Novotel New Delhi Aerocity and Andaz Delhi, and on Carnival Cruise Lines in the United States. He has also taken culinary masterclasses with French chef Alain Ducasse. Arora says cinnamon, cloves, cardamom and ginger give the winter dishes their richness and warmth.
Thomas Varghese, Chief Culinary Operations, says the kitchen pairs traditional slow-cooking techniques with contemporary presentation.
A treehouse-style dining room and a spice-driven bar round out the visit
The Machaan, a private dining space inspired by a treehouse, is available for family celebrations, anniversaries and gatherings with friends. Director Experiences Lijo John says the 100-day menu cycle gives guests another reason to come back.
The signature bar, Neelantara – Horizon of Blue, serves cocktails made with Indian-inspired ingredients. Mixology Experience Director Abhishek Bolla says spices, herbs and botanicals shape the drinks, which he describes as familiar yet unexpected.
The Third Voyage follows the restaurant's June 2026 grand opening and its summer-inspired Second Voyage.
