Seattle – October 20, 2026 -- Seabourn is turning its Earth & Ocean restaurant concept into a fleetwide culinary philosophy, with locally inspired menus and new dining experiences coming to guests at sea and ashore.
The philosophy pairs regional specialties, seasonal produce and culinary traditions with gourmet ingredients sourced worldwide for their quality, flavor and craftsmanship. It takes its name from the Earth & Ocean restaurant that Seabourn introduced in 2018, which offered rotating menus built on fresh, locally available ingredients.
Chef's Market Finds put regional dishes on the menu
In The Restaurant, menus will feature "Chef's Market Finds," highlighting local ingredients from the regions where each ship is sailing. Examples include:
- Fresh Lingcod with Buttered Spinach, Arugula & Green Apple in Alaska
- Pink Snapper with Truffled Spaghetti Squash in Australia and New Zealand
- Fresh Arctic Char with Fingerling Potatoes & Lemon-Butter Caper Sauce in Northern Europe
Seabourn says its guest research identified fresh ingredients, thoughtful presentation, skilled preparation and attention to detail as central measures of food and service. Destination-inspired cuisine also appealed broadly across guest groups.
Terroir and merroir shape the flavor story
The concept draws on two ideas: terroir for food from the land and merroir for food from the sea. In Alaska, mineral-rich glacial waters help shape wild salmon and king crab. Across the Mediterranean, olive groves, coastlines and generations of culinary tradition influence everything from seafood preparations to regional oils and wines.
New onboard experiences arrive over the next year
Over the next year, Earth & Ocean will extend beyond restaurant menus through chef-led experiences, market visits and other programming designed to connect guests with local food cultures. Destination-inspired offerings being introduced across the fleet include:
- Regional scenic cruising brunches
- Regional seafood boils
- Refreshed Patio menus
- Fresh pasta
- An enhanced caviar program
Michael Stendebach, Seabourn's Senior Vice President, Guest Experience & Product Development, said the philosophy grew out of guest feedback about what they value most, and that guests strongly embraced the original restaurant.
Seabourn says additional menus, programming and destination-focused experiences will be introduced across the fleet and ashore, with further details to be announced.
